Cusco Gastronomy

The meals are part of the cosy atmosphere that travelers find in Cusco. Chicherias and Picanterías have let to be private places for Cusco people and, like everything in the city, they are now attraction centers. Between the variety of typical dishes are:

• Kapchi (stew or soup made of broad beans or mushrooms with potatoes, milk, eggs and cheese). 
• Chicharrón with mote (pig cooked in its own fat and accompanied by mote or kernell corn). 
• Humitas (sweet dough made of filled with cinnamon and raisins, wrapped with corn leaves and cooked with steam). 
• Tamales (corn dough filled with meat, wrapped in banana leaves and cooked with steam). 
• Chuño Cola (Chuño cream soup with meat and rice, chickpeas and  potatoe starch). 
• Lawa de Choclo (fresh corn cream soup, broad beans, dry yellow chili pepper and huacatay). 
• Adobo (meat of pig marinated with chicha and spices, and cooked in a saucepan). 
• Olluquito con charqui (stew ollucos and dried meat or llama meat). 
• Rocoto Relleno (Hot pepper filled with grinded meat, peanuts and peas, is battered with shaked eggs and it is served with baked potatoes). 
• Puchero (soup based on cattle meat, head of lamb, bacon and raisins, to which cabbage, potatoes, chick-peas and rice are added). 
• Pepián of rabbit or guinea pig (stew based on corn that can have rabbit or the famous guinea pig). 
• Cheese kapiches. 
• Drinks: Cuzqueña beer, pisco, hard liquor and chicha de jora.
